This Melon Salsa recipe calls for 3 cups diced melon. You can use a mix of your favorite melons. This recipe goes particularly well with chicken or fish. Just spoon some over before serving.
What You Need
3 cups diced melon
1/4 cup diced red bell pepper
1 1/2 tablespoon finely chopped cilantro
1/4 cup honey
6 tablespoons lime juice
1/2 teaspoon salt
1 tablespoon minced jalapeņo pepper
What To Do
1. Seed the jalapeno before mincing (the seeds hold almost all of the heat).
2. Combine all ingredients in large bowl and mix well.
3. Cover and refrigerate overnight before serving.
