Salsa Verde recipes are for the green salsas based on tomatillos rather than tomatoes.
What You Need
12 ounces tomatillos, husked and cleaned
1/2 small onion, chopped
1 tablespoon cilantro, fine-chopped
1 teaspoon minced serrano chilies
1 garlic clove, minced
1/4 teaspoon ground cumin
1/8 teaspoon sugar
Salt to taste
What To Do
1. Place tomatillos in saucepan, adding just enough water to cover.
2. Bring to a boil, then reduce to simmer and simmer 6-8 minutes or until tomatillos are tender. Remove tomatillos but reserve water.
3. Place tomatillos and remaining ingredients in food processor and pulse until just about - but not quite - smooth.
4. If the Salsa Verde is too thick for your liking, add a bit of the reserved water until the consistency you desire is reached.
5. Serve hot or cold.
