Carrot Cake Recipe
 
What You Need
• 1 1/2 cups salad oil
• 2 cups sugar
• 4 eggs
• 2 1/2 cups flour
• 2 teaspoons baking soda
• 1 tablespoon cinnamon
• 1 teaspoon of salt
• 3 cups peeled, grated carrots
• 1 8-oz. can crushed pineapple, drained
• 1 cup chopped pecans

Icing
• 8 oz. cream cheese, softened
• 6 tablespoons butter, softened
• 2 tablespoons vanilla
• 2 tablespoons grated orange rind
• 1 16-oz. box powdered sugar

What To Do
1. Preheat oven to 325F.

2. Combine oil and sugar.

3. Add eggs, one at a time, beating well after each addition.

4. Sift together flour, baking soda, cinnamon and salt. Add dry ingredients to oil mixture, stirring thoroughly.

5. Add carrots and pineapple, then fold in pecans.

6. Pour into well-greased tube pan. Bake 1 hour, 15 minutes. Allow to cool.

7. When cake is cool, make frosting: Beat cream cheese and butter until creamy and fluffy. Add remaining ingredients. Spread evenly onto cake.
