Carrot Cake Recipe
What You Need
• 2 cups sugar
• 1 1/2 cups begetable oil
• 4 eggs, well beaten
• 2 teaspoons baking soda
• 2 teaspoons baking powder
• 2 teaspoons cinnamon
• 1 teaspoons salt
• 2 cups flour
• 1 cup chopped pecans
• 3 cups grated carrots

• 1 16-oz. box confectioner's sugar
• 8 oz. cream cheese, softened
• 1/4 cup butter, softened
• 1 teaspoon lemon extract

What To Do
1. Preheat oven to 325F. Grease and flour 3 layer pans or 1 bundt pan.

2. Mix sugar and oil together.

3. Add eggs and mix well.

4. Combine dry ingredients and stir in. Mix until smooth.

5. Add pecans and carrots.

6. Pour into pans. Bake 30 minutes for layers or 1 hour if using bundt pan. Cake is done when a knife inserted near the center comes out clean.

7. Allow to completely cool before frosting.

Frosting: Add all ingredients together and blend well. Spread onto cooled cake.
