This Carrot Cake recipe makes 12 servings.
What You Need
1 cup oil
1 cup brown sugar
4 eggs
1/3 cup dry milk
1 teaspoon salt
2 teaspoons cinnamon
1 cup walnuts, chopped
1 cup sugar
1 teaspoon vanilla
2 cups flour, whole wheat
1 teaspoon baking soda
1 teaspoon baking powder
3 cups carrots, shredded
What To Do
1. Preheat oven to 350F. Grease and flour a 10-inch fluted pan or tube pan.
2. Add oil and sugars to a large bowl and blend on low until well mixed.
3. Add vanilla. Beat in eggs, one at a time, blending well after each addition.
4. Separately, stir together dry ingredients and then add to batter and blend until well mixed.
5. Stir in walnuts and carrots by hand.
6. Pour batter into prepared pan and bake 50-60 minutes.
7. Cool in pan, then top with powdered sugar before serving.
