Fabulous Carrot Cake Recipe

What You Need
1 20-oz. can crushed pineapple
1 cup margarine
1 cup brown sugar, packed
1 cup granulated sugar
3 eggs
4 cups carrots, shredded
1 cup raisins
2 teaspoons vanilla extract
3 cups all purpose flour
2 teaspoons baking soda
1 teaspoon ground cinnamon
1 teaspoon ground ginger
1/2 teaspoon salt
What To Do
1. Drain pineapple. Preheat oven to 350F. Grease and flour four mini-loaf pans, or one 13x9 baking dish.
2. Add margarine and sugars to bowl and cream until light and fluffy.
3. Beat in eggs.
4. Beat in pineapple, carrots, raisins and vanilla.
5. Combine remaining ingredients separately, then gradually beat into batter until well blended.
6. Pour into prepared pans and bake 40 minutes for mini-loaves or 50-60 minutes for one larger cake.
