Honey Carrot Cake Recipe
 
What You Need
• 1 large whole egg
• 2 egg whites
• 3/4 cup honey
• 1/2 cup margarine
• 1 teaspoon vanilla
• 1 1/2 cup all purpose flour
• 1 1/4 teaspoon ground cinnamon
• 1 teaspoon baking powder
• 1/2 teaspoon baking soda
• 1/4 teaspoon ground allspice
• 1/4 teaspoon salt
• 1 1/2 cup finely shredded fresh carrots
• 1/3 cup raisins

What To Do
1. Preheat oven to 350F.

2. In mixing bowl, beat egg and egg whites until light and frothy.

3. Beat in honey, margarine and vanilla.

4. Sift together flour, cinnamon, baking powder, baking soda, allspice and salt; stir dry ingredients into egg mixture.

5. Fold in carrots and raisins.

6. Turn batter into a greased 8x8-inch square pan. Bake 45-50 minutes or until cake tester inserted in center of cake comes out clean.

7. Cool 10 minutes in pan, then remove from pan to cool completely.
