Honey Wheat Carrot Cake Recipe
 
This Honey Wheat Carrot Cake recipe makes 12 servings.

What You Need
• 2 teaspoons baking soda
• 1/2 cup butter or margarine
• 16 oz. canned fruit cocktail, in juice, drained
• 1/2 cup chopped walnuts
• 2 teaspoons cinnamon
• 8 oz. cream cheese, softened
• 2/3 cup dry milk powder
• 4 eggs
• 3 cups grated carrots
• 1 1/2 cups honey
• 1 tablespoon honey

Honey Cream Cheese Frosting
• 1/2 teaspoon nutmeg
• 1 cup salad oil
• 2 1/2 teaspoons vanilla
• 1/4 cup wheat germ
• 2 cups whole wheat flour

What To Do
1. In large mixing bowl, combine dry ingredients.

2. Add oil, honey and eggs. Beat until well mixed.

3. Stir in carrots, fruit cocktail and nuts.

4. Pour into greased 9x13-inch pan. Bake at 325F for 40 to 45 minutes or until cake tests done.

5. Cool. Serve plain or frost with Honey Cream Cheese Frosting.

• Honey Cream Cheese Frosting: Combine all ingredients and beat to spreading consistency, adding dry milk powder as needed.
