Irish Cream Cheesecake Recipe

What You Need
1 cup graham cracker crumbs
1/4 cup sugar
1/4 cup margarine, melted
1 envelope unflavored gelatin
1/2 cup cold water
1 cup sugar
3 large eggs, separated
16 oz. cream cheese, softened
2 tablespoons cocoa
2 tablespoons bourbon
1 cup whipping cream, whipped
What To Do
1. Combine graham cracker crumbs, sugar and margarine and mix until crumbly. Press into bottom of 9-inch springform pan to form crust.
2. Add water to saucepan, and add gelatin. Stir over low heat until gelatin is dissolved.
3. Blend in 3/4 cup sugar and beaten egg yolks; cook over low heat for 3 minutes, stirring constantly.
4. Separately, combine cream cheese and cocoa with an electric mixter on medium speed. Gradually add gelatin mix from saucepan, plus bourbon, until well blended.
5. Chill just until mixture thickens.
6. Beat egg whites until foamy. Gradually add remaining sugar to egg whites, beating until stiff peaks form. Fold this mixture, plus whipped cream, into cheese mixture.
7. Pour filling into crust and chill until firm.
