What You Need
1 1/4 cups graham cracker crumbs
2 tablespoons sugar
1/4 cup butter or margarine, melted
1 teaspoon grated lime rind
3 8-oz. packages softened cream cheese
3/4 cup sugar
1 tablespoon grated lime rind
1/4 cup lime juice
1 teaspoon vanilla extract
2 cups sour cream
3 tablespoons sugar
What To Do
Crust: Combine graham cracker crumbs, 2 tablespoons sugar, melted butter and teaspoon grated lime rind and stir well. Press mixture evenly into 9-inch springform pan. Bake at 350F 5-6 minutes. Let cool.
Filling: Preheat oven to 375F. Beat cream cheese until light and fluffy, then gradually add 3/4 cup sugar and beat well. Add eggs one a time, beating after each. Stir in lime rind, lime juice and vanilla. Pour into springform pan with crust. Bake 45 minutes, or until set.
Topping: Combine sour cream and 3 tablespoons sugar; stir well and carefully spread over cheesecake. Return to 500F oven for 5 minutes.
Allow cheesecake to cook to room temperature, then chill (still in springform pan) at least 8 hours before serving. Garnish with lime slices if desired.
