Lime Cheesecake Recipe
What You Need
• 1 1/4 cups graham cracker crumbs
• 2 tablespoons sugar
• 1/4 cup butter or margarine, melted
• 1 teaspoon grated lime rind
• 3 8-oz. packages softened cream cheese
• 3/4 cup sugar
• 3 eggs
• 1 tablespoon grated lime rind
• 1/4 cup lime juice
• 1 teaspoon vanilla extract
• 2 cups sour cream
• 3 tablespoons sugar

What To Do
• Crust: Combine graham cracker crumbs, 2 tablespoons sugar, melted butter and teaspoon grated lime rind and stir well. Press mixture evenly into 9-inch springform pan. Bake at 350F 5-6 minutes. Let cool.

• Filling: Preheat oven to 375F. Beat cream cheese until light and fluffy, then gradually add 3/4 cup sugar and beat well. Add eggs one a time, beating after each. Stir in lime rind, lime juice and vanilla. Pour into springform pan with crust. Bake 45 minutes, or until set.

• Topping: Combine sour cream and 3 tablespoons sugar; stir well and carefully spread over cheesecake. Return to 500F oven for 5 minutes.

Allow cheesecake to cook to room temperature, then chill (still in springform pan) at least 8 hours before serving. Garnish with lime slices if desired.
