Pineapple Sheath Cake Recipe
This pineapple sheath cake recipe includes a coconut topping. Instructions for topping are below preparation instructions for the cake.

What You Need
• 2 cups flour
• 1 cup sugar
• 1 teaspoon baking soda
• 1/2 teaspoon salt
• 1/2 cup salad oil
• 2 eggs
• 1 teaspoon vanilla
• 1 14-oz. can crushed pineapple with juice

What To Do
1. Mix flour, sugar, soda and salt in a bowl.

2. Stir in oil, eggs, vanilla and pineapple with juice. Do not use an electric mixer.

3. Bake in a greased, floured 11x14 pan for 30 minutes in a 350F oven. Frost with coconut topping.

Coconut Topping Ingredients
• 2/3 stick margarine
• 4 tablespoons milk
• 2/3 box powdered sugar
• 1 teaspoon vanilla
• 1/2 cup chopped nuts
• 1 cup coconut

Mix all ingredients and bring to a boil; boil 5 minutes. Pour hot over cake as soon as the cake is removed from oven.
