Coconut Pound Cake Recipe
 
What You Need
• 2 cups white sugar
• 1 cup butter
• 5 eggs
• 2 cups all-purpose flour
• 1 1/2 teaspoons baking powder
• 1/2 cup milk
• 3 1/2 oz. flaked coconut
• 1 teaspoon coconut extract
• 1 cup white sugar
• 1/4 cup water
• 1 teaspoon coconut extract
• 1/2 cup chopped walnuts

What To Do
1. Preheat oven to 350F. Grease and flour a 10-inch tube pan.

2. In a large bowl, cream together 2 cups sugar and the butter. Fold in eggs one at a time, fully incorporating each before adding another.

3. In separate bowl, mix flour, baking powder, milk, flaked coconut, and 1 teaspoon coconut extract.

4. Beat flour mixture into creamed mixture.

5. Pour batter into prepared pan.

6. Bake 1 hour or until a knife inserted in center comes out clean.

7. Cool on wire rack for 5 minutes, then place on cake platter.

Glaze: Mix together in a small saucepan 1 cup sugar, water, 1 teaspoon coconut extract and walnuts. Boil 1 minute, and pour over cake while cake is still warm.
