What You Need
6 eggs, separated
1 cup sugar
1 cup flour
1/3 teaspoon Cream of Tartar
1 teaspoon vanilla
Grated rind of 1 lemon
1/4 teaspoon salt
What To Do
1. Preheat oven to 325F.
2. Sift flour four times and set aside.
3. Beat egg yolks until lightly colored and thick.
4. Gradually add to yolks half the sugar, the lemon rind and vanilla.
5. Beat egg whites until stiff; add cream of tartar and remaining sugar to egg whites.
6. Transfer egg white mixture into yolk mixture and combine.
7. Add salt and sifted flour and fold into the egg mixture.
8. Pour batter into ungreased, round cake pan with a center tube. Bake 1 hour.
