This Coconut Cookies recipe makes 36-48 cookies, depending on size.
What You Need
1 cup butter or shortening
2 cups brown sugar
2 eggs
3-and-1/4 cups flour
2 teaspoons cream of tarter
2 teaspoons baking soda
1 cup coconut
What To Do
1. Preheat oven to 350F.
2. Cream shortening and sugar, then add eggs and beat well.
3. Sift flour, cream of tarter, and baking soda together, then add to cream mixture and blend well.
4. Add coconut and stir in (mixture will be very thick).
5. Form into small balls (about the size of a walnut) and place doughballs on greased cookie sheet. Flatten each with a fork.
6. Bake 9-10 minutes.
