This Eggnog Cookies recipe makes approximately 36 cookies.
What You Need
2 1/4 cups flour
1 teaspoon baking powder
1/2 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1 1/4 cups white sugar
3/4 cup butter, softened
1/2 cup eggnog
1 teaspoon vanilla
2 large egg yolks
What To Do
1. Preheat oven to 300F.
2. In a bowl, combine all dry ingredients.
3. In another bowl, cream together sugar and butter until the mixture resembles a grainy paste. Add eggnog, vanilla and egg yolks and beat at medium speed until smooth.
4. Add dry ingredients and beat at low speed until blended. Be careful not to over-mix.
5. Drop by teaspoonfuls onto ungreased baking sheet, 1 inch apart. Sprinkle lightly with additional nutmeg.
6. Bake 23-25 minutes, or until bottoms are light brown. When done, transfer immediately from baking sheet to cool.
