Rhubarb Strawberry Cobbler Recipe

What You Need
Filling
1 1/4 cups sugar
3 tablespoons all-purpose
1 1/2 teaspoons cinnamon
1 1/2 teaspoon zest of orange rind
6 cups rhubarb, coarsely chopped
3 cups strawberries, sliced
Topping
1 1/2 cups all-purporse flour
3 tablespoons sugar
1 1/2 teaspoons baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
3 tablespoons margarine, chilled
1 cup buttermilk
What To Do
Filling: Preheat oven to 400F. In a large bowl, combine sugar, flour, cinnamon and orange rind, then add rhubarb and strawberries and toss well. Spread evenly in 13x9 baking dish. Bake 10 minutes (leave oven on at 400F).
Topping: In a large bowl, combine flour, sugar, baking powder, baking soda and salt. Cut in margarine until mixture resembles crumbles. Using a fork, stir in buttermilk until soft dough forms. Drop dough by tablespoonfuls in on top of hot fruit filling (you should get about 12 drops). Place back in oven for 25 minutes, or until topping is golden brown.
