This Pumpkin Pie recipe makes 2 pies.
What You Need
2 uncooked graham cracker pie crusts
3 eggs, lightly beaten, divided
1 29-oz. can pumpkin
1 1/2 cups half-and-half or light cream
1/2 cup granulated sugar
1/2 cup firmly packed light brown sugar
1 1/2 teaspoons pumpkin pie spice
1 teaspoon ground ginger
What To Do
1. Preheat oven to 400F.
2. Lightly brush a little of the beaten eggs on each pie crust and bake them for four minutes.
3. While the crusts and baking, mix all ingredients together, blending thoroughly.
4. Remove pie crusts from oven and pour in filling.
5. Bake 15 minutes, then reduce oven temperature to 350F and continue baking another 40-45 minutes.
