This Apricot Muffins recipe makes 12 muffins.
What You Need
1/2 cup dried apricots, finely chopped
1/3 cup unsweetened apple juice
1 cup whole wheat flour
2 teaspoons baking powder
1/4 teaspoon baking soda
1/4 teaspoon ground cardamom
1/3 cup chopped walnuts
3 tablespoons vegetable oil
1 tablespoon sugar
1 egg
What To Do
1. Preheat oven to 350F.
2. Add apricots to apple juice and soak for 10 minutes.
3. Combine flour, baking powder, baking soda, cardamom and walnuts.
4. Separately, beat together the oil, sugar and egg, then add to dry ingredients. Also add apricots and juice, and mix until ingredients are just blended.
5. Spoon into oiled muffin tins, filling each 3/4 full.
6. Bake 10-15 minutes, until golden brown.
