Th jovial television weatherman has his own tried-and-true chili, which is why this Al Roker's Chili Recipe has his name in its title! It makes 14 servings.
What You Need
2 pounds chuck steak, cubed into bite-sized pieces
1 pound hot Italian sausage (remove casings)
2 large onions, diced
12 cloves garlic, diced
1 tablespoon ground cumin
1 tablespoon paprika
1 tablespoon chili powder
1 (32-ounce) can crushed tomatoes
1 (16-ounce) can pinto beans
1 (16-ounce) can Northern beans
1 (16-ounce) can dark red kidney beans
Chopped scallions (for garnish)
Sour cream (for garnish)
Shredded Cheddar cheese (for garnish)
What To Do
1. Brown beef and crumbled sausage in a large Dutch oven. Remove meat and reserve. Drain fat, reserving about two tablespoons.
2. Saute onions and garlic in reserved fat until translucent, about 5 to 7 minutes.
3. Add cumin, paprika and chili powder, then add tomatoes and beef to the Dutch oven. Stir and simmer on stovetop for approximately 90 minutes.
4. After 90 minutes, add the canned beans and simmer 30 minutes more.
