Crockpot Black Bean Chili Recipe
|
This Crockpot Black Bean Chili recipe makes 4 servings. Use a 3.5-quart slow cooker for best results. This recipe also uses pork rather than beef, although you can substitute beef cut up for stews in place of the pork, if you prefer.
What You Need
1 1/2 pounds boneless pork, cut into half-inch cubes
2 (15 1/2-oz.) cans black beans, drained
1 cup chopped onion
1 cup chopped yellow bell pepper
1 cup thick and chunky salsa
2 cloves garlic, minced
1 teaspoon chili powder
1/2 teaspoon cumin
1/4 teaspoon crushed red pepper
What To Do
1. Add all ingredients to crockpot (if using beef in place of pork, brown beef cubes in skillet before adding to crockpot).
2. Cover crockpot. Cook on low 7-8 hours.
3. Garnish each serving with shredded cheese and/or sour cream.
