This Spanish Omelette recipes makes 4 servings.
What You Need
3 cups potatoes, peeled and finely chopped
1 medium onion, chopped
3/4 teaspoon salt
1/4 teaspoon crushed red pepper
2 tablespoons vegetable Oil
6 large eggs, beaten
1/3 cup milk
1/2 teaspoon salt
1/8 teaspoon pepper
What To Do
1. Combine potatoes, onion, 3/4 teaspoon salt and crushed red pepper.
3. In a bowl, combine eggs, milk, 1/2 teaspoon salt and pepper. Pour mixture over potatoes in skillet.
4. Reduce heat, cover and cook over low for 8-10 minutes or until eggs are nearly set.
5. Uncover skillet and place under broiler, 3-4 inches from the heat, for 2-3 minutes until top is set.
