Scrambled Eggs with Chorizo Recipe

This Scrambled Eggs with Chorizo recipe makes 4 servings.
What You Need
4 oz. chorizo sausage (bulk)
6 large eggs
1/4 cup milk
1/4 teaspoon salt
Dash of Pepper
1 medium tomato, peeled, seeded and chopped
What To Do
1. Crumble sausage into unheated 10-inch skillet. Cook slowly, 15-20 minutes, stirring occasionally. Drain well and return to skillet.
2. In medium bowl, beat eggs, milk, salt, pepper with a fork. Pour the egg mixture over the sausage in the skillet. Cook over low heat (no stirring) until eggs start to set on bottom and sides of skillet. Lift the cooked portion so uncooked egg will run underneath.
3. Continue cooking 2-3 minutes until eggs are approaching fully set.
4. Stir in tomato and continue cooking until eggs are set but still moist.
