This Catfish Cakes recipe makes 12 2-inch cakes. Like crabcake, only with catfish! Add a little Cajun seasoning for more spice.
What You Need
1 pound catfish fillets
1 egg
1 tablespoon lemon juice
1/3 cup onion, chopped very fine
1/3 cup green pepper, chopped very fine
3/4 cup Bisquick
Salt and pepper
Oil for frying
What To Do
1. Add diced fish, plus onion, green pepper, and salt and pepper to taste, to bowl, and mix together.
2. Whisk together egg and lemon juice then add to fix mixture, along with Bisquick.
3. Form mixture into patties.
4. Carefully place patties in hot oil and fry until browned and crispy on both sides.
