Italian Orange Roughy Recipe
The mild flavor of orange roughy makes it a great foundation to build other flavors upon. This Italian Orange Roughy recipe does that with lemon-pepper seasonings and undrained Italian tomatoes.
What You Need
4 6-oz. orange roughy fillets
1/4 teaspoon lemon-pepper seasoning
1/4 teaspoon salt
1/4 cup finely chopped onion
1/4 cup finely chopped celery
1 (14.5 ounce) can Italian diced tomatoes, undrained
What To Do
1. Preheat oven to 350F.
2. Place orange roughy fillets into 13x9x2 baking dish (ungreased).
3. Sprinkle lemon-pepper and salt over fillets, then top with onion and celery.
4. Pour Italian diced tomatoes over top.
5. Bake 30-40 minutes or until fillets flake easily with a fork.
