Grilled Salmon Sandwich Recipe

This Grilled Salmon Sandwich recipe makes 4 servings.
What You Need
4 3-oz. salmon fillets, skinned
1/2 teaspoon tarragon, dried, crushed
1/4 teaspoon salt
1/8 teaspoon black pepper
2 teaspoon olive oil
2 cloves garlic, minced
1/4 cup chicken broth
1 tablespoon sweet pickle relish
2 teaspoon lemon juice
Pinch of cayenne pepper
1 1/2 cup Boston lettuce leaves
1/2 cup plum tomatoes, sliced
4 slices Pumpernickel bread
What To Do
1. Spray indoor ridged grill with nonstick cooking spray. Preheat over medium. (Alternately, use an outdoor grill.) Sprinkle both sides of salmon fillets with tarragon, salt and black pepper. Grill 5 minutes per side, cooking through.
Sauce: In small nonstick skillet, heat oil. Add garlic and cook 2 minutes, stirring constantly. Stir in broth, relish, lemon juice and cayenne. Cook another 2-3 minutes, stirring frequently. Sauce should boil and slightly reduce. Remove from heat.
Sandwich: Divide lettuce and tomato equally over 4 slices of bread. Place one salmon fillet on each bread slice; drizzle sauce over top. Serve open-faced.
