What You Need
5 large potatoes, peeled and halved
1 14.75-oz. can salmon
1/2 cup all-purpose flour
1 quart vegetable oil for frying
What To Do
1. Place potatoes in small saucepan and cover with water. Bring to boil and cook until tender, about 15 minutes. Let cool, then mash.
2. In a large bowl, mix together salmon, egg and potatoes, plus salt and pepper to taste. Mold the mixture into patties. Coat both sides of patties with flour.
3. Add oil to large skillet and heat over medium-high heat.
4. Drop patties, 2 to 3 at a time, into oil. Fry, turning, until both sides are golden brown. Drain on paper towels before serving.
