This Salmon with Basil recipe makes 4 servings.
What You Need
4 8-oz. fillets of fresh salmon
2 large shallots chopped very fine
1/2 cup fish stock
2 tablespoon chopped fresh basil
1/2 cup sherry vinegar
2 cups hollandaise sauce
What To Do
1. Preheat oven to 450F.
2. Arrange salmon in a shallow skillet and sprinkle with salt and pepper to taste.
3. Add shallots, fish stock, basil and sherry vinegar.
4. Cover and poach in oven for about 20 minutes or until firm (but not dry). Remove fillets from skillet (leave juices in skillet) and arrange on platter.
5. Place skillet over heat and reduce pan juices to about a fourth. Add mixture to hollandaise sauce; mix well and pour over fillets.
