This Spinach Tilapia recipe pairs tilapia with spinach and a butter sauce. It serves 4.
What You Need
4 tilapia fillets (about 6 oz. each)
10 ounces fresh spinach, washed
1/4 cup softened butter
1 tablespoon lemon juice
1 tablespoon chopped parsley
1/2 teaspoon salt
Dash of hot pepper sauce
What To Do
1. Poach tilapia fillets for 5-6 minutes, and steam spinach for a couple minutes.
2. In a small bowl, combine butter, lemon juice, chopped parsley, salt and pepper sauce and whip smooth.
3. Arrange a bed of steamed spinach on each serving plate, and place a tilapia fillet on top of each.
4. Top each fish with a dollop of lemon-butter mixture.
