Migas is an egg-based dish, sort of a Mexican omelette, that is great for any meal but especially popular for breakfast. This migas recipe makes 2-3 servings.
What You Need
5-6 eggs, beaten
Salt
Pepper
1 medium ripe tomato, diced
1/2 medium white onion, chopped
1 serrano pepper, diced
1 teaspoon fresh chopped cilantro
3 corn tortillas cut into 1-inch squares
1 cup grated Montery Jack cheese
2 tablespoons oil or butter
What To Do
1. Heat oil in saute pan over medium-high. Add tortilla strips, cooking 2-3 minutes. Remove.
2. Add eggs to pan and scramble, cooking until fluffy but not quite done.
3. Stir in onion, serrano, tomato and cilantro. Cook about 1 minute more, until eggs are fully done and added ingredients are warmed through.
4. Turn off heat; add grated cheese. Stir lightly, and top with more cheese.
Serving suggestion: Serve with warm tortillas and black beans.
