Buttermilk Pancakes Recipe

What You Need
1 1/2 cups flour
1 tablespoon sugar
1/2 teaspoon salt
2 1/4 teaspoon baking powder
1/2 cup buttermilk
2/3 cup milk
1 egg, beaten
2 tablespoons cooking oil
1/2 cup milk
What To Do
1. Lightly oil and preheat griddle or large skillet.
2. Sift flour, sugar, salt and baking powder together.
3. Separately, beat together buttermilk, milk, egg and oil. Pour into dry ingredients and stir until well mixed. Batter should be thin by pancake batter standards; use the 1/2 cup milk to thin batter as needed.
4. Pour batter onto hot griddle by 1/8-cupfuls. Turn pancakes once during cooking.
