This Cheddar Pancakes recipe makes 24 3-inch pancakes.
What You Need
8 oz. mild cheddar cheese, grated
3/4 cup sour cream
3 yolks of large eggs, beaten
2 teaspoons unbleached flour
1 teaspoon unbleached flour
3/4 teaspoon salt
1 1/2 teaspoons thyme
1/2 teaspoon dry mustard
2 teaspoons butter
What To Do
1. Add sour cream to grated cheddar in bowl and mix well; then add egg yolks and mix again.
2. Mix together flour, salt, thyme and dry mustard, then add to cheese mixture and mix well.
3. Melt butter in heavy skillet over low heat; drop batter into skillet by teaspoonfuls.
4. Cook over medium heat until lightly browned on bottom. Turn and lightly brown other side. Serve immediately.
