These Cheese Lasagna recipe makes three servings.
What You Need
6 oz. whole wheat lasagna noodles
1/2 cup tomato sauce
1 cup onion, pepper and mushrooms (mixture of three)
1 1/2 cups low-fat cottage cheese
2 eggs
1 tablespoon Parmesan cheese
3 oz. mozzarella cheese, grated
2 tablespoons Parmesan cheese
What To Do
1. Cook lasagna noodles in boiling water until tender; drain and set aside.
2. Preheat oven to 350F.
3. Combine tomato sauce with 3-vegetable mixture.
4. In a separate bowl, mix cottage cheese, eggs and 1 tablespoon Parmesan cheese.
5. In an 8x8-inch casserole dish, layer half the noodles, the cottage cheese mixture and grated mozzarella cheese. Top with tomato sauce and the remaining noodles, and sprinkle 2 tablespoons Parmesan cheese on top.
6. Bake 25 minutes.
