Here's a pasta salad with a twist - a tortellini twist. This Tortellini Salad recipe combined cheese-filled tortellini with peppers, onion, olives, herbs and spices. Feel free to experiment with a different type of tortellini. This recipe makes 5 1-cup servings.
What You Need
1 8-ounce package cheese-filled tortellini
1/2 cup chopped sweet red pepper
1/2 cup chopped green pepper
1/4 cup chopped green onions
1/4 cup sliced ripe olives
1/4 cup olive oil
3 tablespoons wine vinegar
1 1/2 tablespoons chopped fresh parsley
1 1/2 tablespoons chopped fresh dill
1/2 teaspoon dried whole oregano
1 1/2 teaspoons Dijon mustard
1/4 teaspoon salt
1/4 teaspoon freshly ground pepper
What To Do
1. Cook the tortellini according to package instructions and drain.
2. Combine cooked, drained tortellini and next four ingredients and toss gently.
3. Combine olive oil and remaining ingredients in a blender or food processor; process until blended. Pour dressing over tortellini mixture; toss gently.
4. Cover and chill 8 hours. Toss gently prior to serving.
