Basil Tomato Salad Recipe
What You Need
• 2 tablespoons olive oil
• 2 tablespoons cider vinegar
• 2 teaspoons chopped fresh basil
• 1/2 teaspoon salt
• 1/4 teaspoon pepper
• 3 cups cooked rice, cooled
• 2 medium tomatoes, chopped
• 1 medium cucumber, seeded and chopped
• 1 small red onion, chopped

What To Do
1. In a small bowl, whisk together oil, vinegar, basil, salt and pepper.

2. Add rice, tomatoes, cucumber and onion; toss.

3. Chill before serving.
