This Coconut Shrimp recipe makes four servings.
What You Need
1 cup plain yogurt
2/3 cup coconut shavings
2/3 cup breadcrumbs
1/2 cup chopped pecans
1 pound shrimp, cleaned, deveined
What To Do
1. Preheat oven to 400F and spray cookie sheet with nonstick cooking spray.
2. Mix coconut, bread crumbs, and pecans.
3. Dip shrimp into yogurt to coat, then roll shrimp in coconut mixture, patting to coat well.
4. Place shrimp on cookie sheet and bake for 8 minutes, then reduce heat to 350F and bake another 8-10 minutes or until golden.
