Beefy Carrot Barley Soup Recipe
This Beefy Carrot Barley Soup recipe makes 4 servings.
What You Need
4 cups water
1 cup dry barley
3 beef bouillon cubes
1 1/2 teaspoons sugar
1/2 teaspoon black pepper
1 teaspoon thyme
1 teaspoon garlic powder
1/2 pound lean ground beef
3 medium carrots, sliced into 1-inch strips
What To Do
1. Bring water to boil in a medium saucepan.
2. Add barley, bouillon cubes, sugar, pepper, thyme and garlic powder. Cover and reduce heat; simmer 30 minutes.
3. While soup is simmering, saute beef until brown; drain and rinse with cold water.
4. Add beef and carrots to barley after barley has been simmering 30 minutes; cook another 15 minutes.
