Here's a tasty Lentil Soup recipe that incorporates a ham hock for old-fashioned pork taste.
What You Need
1 pound dry brown lentils, picked, rinsed
1 large onion, finely chopped
1 large celery stalk, finely chopped
1 large carrot, shredded
2 quarts water
1 large smoked ham hock
2 teaspoons sugar
2 beef bouillon cubes
1/4 teaspoon dry mustard
1/2 teaspoon dried thyme
Dash of cayenne pepper
Salt and pepper to taste
What To Do
1. Add all ingredients except salt and pepper to large stock pot and stir to combine. Bring to a boil.
2. Cover. Reduce heat and simmer approximately 45 minutes, until lentils are very tender and soup has thickened.
3. Remove ham hock and shred meat from bone and return to soup.
4. Skim fat from soup. Add salt and pepper to taste.
