Parsley and Potato Soup Recipe

This Parsley and Potato Soup recipe makes 4 servings.
What You Need
1 medium onion, chopped
1 teaspoon olive oil
2 cups chopped potatoes
1 cups sliced leeks, white only
4 cups vegetable stock
1 teaspoon salt
1/4 teaspoon white pepper
2 tablespoons chopped fresh chives
1/4 cup chopped fresh parsley
What To Do
1. Combine onion, olive oil, potatoes, leeks and vegetable stock in a large pot. Cover and bring to boil. Lower heat and simmer 30 minutes.
2. Cool slightly, then puree.
3. Pour into serving bowls. Season with salt and pepper, and garnish with chives and parsley.
