What's Up Carrot Soup Recipe
 
This Summer Fruit Soup recipe makes 4 servings.

What You Need
• 1 lb. carrots, thinly sliced*
• 2 cups chicken broth
• Chives, minced
• 2 tablespoons honey
• 1 cup milk or half and half
• Nutmeg
• 1 onion, chopped
• Sour cream or plain yogurt, as needed

What To Do
1. Place carrots, onions and chicken broth in saucepan. Cover and simmer about 15 minutes or until carrots are tender.

2. Puree in blender or processor until smooth. Return to saucepan.

3. Add honey and milk. Return to simmer.

4. Serve hot with dollop of sour cream and sprinkle with nutmeg. Garnish with chives.

*Substitute 1 20-ounce package of frozen sliced carrots, if desired.
