Meat and Potato Stew Recipe
This Meat and Potato Stew Recipe makes 8 servings.
What You Need
2 1/2 pound round steak, cut into 1-inch cubes
1 6-oz. can tomato paste
8 large white potatoes, quartered
1/4 cup olive oil
1/2 teaspoon oregano
1/2 cup red wine
Salt and pepper, to taste
What To Do
1. Using a 6-quart stew pot, heat olive oil, then add beef, salt, pepper and oregano and brown meat.
2. Add tomato paste and wine, plus enough water so that meat is almost covered.
3. Continue cooking, mixing liquids until gravy thickens slightly. Then simmer 45 minutes.
4. Add potatoes and simmer until potatoes are fork tender (approximately 15-20 minutes). Stir occasionally.
