Red Pepper Stew Recipe
 
This is a great recipe for vegetarians or vegans, but meat-eaters shouldn't pass it up, either. It's good!

What You Need
• 1/4 cup dry red wine
• 1/4 cup dry sherry
• 2 large onions, chopped
• 6 red bell peppers, chopped
• 2 teaspoons dried basil
• 1 teaspoon dried marjoram
• 1/4 teaspoon dried thyme
• 1 teaspoon cayenne
• 1 teaspoon paprika
• 1/4 teaspoon salt
• 1/8 teaspoon black pepper
• 2 cups water or broth
• 1/2 cup dried lentils
• 2 16-oz cans small white beans
• 1 6-oz can tomato paste
• 1 6-oz can prune juice

What To Do
1. Heat wine and sherry in a large pot over medium high heat. Add onions and let simmer for a 1-2 minutes (add water if needed to prevent sticking or burning).

2. Add red peppers, then measure spices and add. Stir together and let simmer for five minutes.

3. Add water (or broth) and lentils and simmer uncovered for 40 minutes.

4. Drain cans of beans, then add to pot along with tomato paste and prune juice.

5. Cook long enough to heat through, then serve.
