Raisin Banana Bread Recipe

This Raisin Banana Bread recipe makes four medium loaves, each having about five servings. This is a bit different from "regular" banana bread in that it also includes zucchini and carrots.
What You Need
3 cups all-purpose flour
2 cups sugar
1 teaspoon baking powder
1 teaspoon salt
1 teaspoon pumpkin pie spice
1/2 teaspoon baking soda
1/2 teaspoon ground cinnamon
3 eggs
1 cup vegetable oil
2 teaspoons vanilla extract
1 cup grated zucchini
1 cup grated carrot
1/2 cup mashed ripe banana
1/2 cup raisins
1/2 cup chopped walnuts
What To Do
1. Preheat oven to 350F. Grease and flour four medium loaf pans (5.75 x 3 x 2).
2. Combine first seven ingredients in mixing bowl.
3. Add eggs, oil and vanilla and mix well.
4. Stir in zucchini, carrot, banana, raisins and nuts.
5. Pour into prepared pans and bake 45-50 minutes or until loaves test done with a wooden toothpick.
6. Cool for 10 minutes, then remove loaves from pans and cool completely on wire rack.
