This Special Cornbread recipes makes 8 servings.
What You Need
1 cup cornmeal
1/4 cup all-purpose flour
2 teaspoons baking powder
1/4 teaspoon sugar
1/4 teaspoon baking soda
1 teaspoon salt
1 14.5-oz. can whole tomatoes, undrained
1 medium onion, chopped
1 egg, beaten
3 tablespoons shortening, melted
What To Do
1. Preheat oven to 400F.
2. Heat cast iron skillet in oven for 3 minutes.
3. While skillet is heating, combine dry ingredients in medium bowl.
4. Chop tomatoes (reserving juice), then add tomatoes and juice, plus onion, eggs and melted shortening and mix well.
5. Pour batter into hot skillet; bake 30 minutes or until top is browned.
