This Zucchini Bread recipe makes two 9x5 loaves.
What You Need
3 large eggs
2 cups sugar
2 cups grated zucchini
3 teaspoons vanilla extract
1 cup vegetable oil
3 cups flour
1 teaspoon salt
1 teaspoon baking soda
1/4 teaspoon baking powder
3 teaspoons cinnamon
1 teaspoon allspice
1 cup walnuts (optional)
What To Do
1. Preheat oven to 350F and spray two 9x5 loaf pans with nonstick cooking spray.
2. Beat eggs until foamy, then add sugar, oil, zucchini and vanilla.
3. Separately, combine flour, salt, baking soda, baking powder, cinnamon and allspice.
4. Add dry ingredients into egg mixture and stir well. Add walnuts at this point if using.
5. Turn batter into prepared loaf pans and bake 1 hour, or until loaves test done.
