Green Rice Recipe
The greens in this Green Rice recipe are spinach and parsley. This Green Rice recipe makes eight servings.

What You Need
• 3 cups cooked rice
• 2 eggs, well beaten
• 1/4 cup butter
• 1/4 cup sharp cheese, grated
• 1/2 tablespoon chopped onion
• 1/3 cup parsley, minced
• 2/3 cup spinach, minced
• 1/4 teaspoon salt

What To Do
1. Preheat oven to 325F and grease and flour a 2-quart casserole dish.

2. Combine all ingredients and put into casserole.

3. Bake approximately 45 minutes.

Serving suggestion: Serve this Green Rice recipe as a side dish for beef, chicken or fish.
