This Mexican Rice recipe includes peppers, tomato, cumin and cilantro. A jalapeno pepper provides a little bit of heat. You can turn the heat up by including a second jalapeno; if you don't want any heat, then seed the jalapeno before chopping. This Mexican rice recipe makes 6 servings.
What You Need
1 cup long grain white rice
1 tablespoon vegetable oil
1 1/2 cups chicken broth
1/2 onion, finely chopped
1/2 green bell pepper, finely chopped
1 fresh jalapeno pepper, chopped
1 tomato, seeded, chopped
1 chicken bouillon cube
Salt, to taste
Pepper, to taste
1/2 teaspoon ground cumin
1/2 cup chopped fresh cilantro
1 clove garlic, halved
What To Do
1. Place rice in medium saucepan along with oil; cook over medium heat for three minutes.
2. Add chicken and bring to boil.
3. Add onion, onion, green pepper, jalapeno and diced tomato; stir to combine, and add buillon cube plus remaining ingredients.
4. Cover, reduce heat to low, and cook 20 minutes.
