Rice with Pine Nuts Recipe
This Rice with Pine Nuts recipe makes 4 servings.

What You Need
• 2 tablespoons butter
• 4 tablespoons chopped onions
• 1/4 cup pine nuts
• 1 cup converted rice
• 1/2 cup water
• 2 sprigs fresh thyme
• 1 bay leaf
• Salt and pepper, to taste

What To Do
1. Preheat oven to 400F.

2. Using a heavy, oven-proof saucepan, melt 1 tablespoon butter; add onions and pine nuts, cooking and stirring until onions wilt.

3. Add rice, water, thyme, bay leaf, and salt and pepper. Bring to a boil while stirring to prevent any lumps forming in the rice.

4. Cover tightly and place in oven.

5. Bake 17 minutes.
