Artichoke Oyster Soup Recipe

This Artichoke Oyster Soup recipe makes 6 servings.
What You Need
6 tablespoons butter, melted
1/2 cup shallots, finely chopped
1/4 teaspoon thyme
1 bay leaf
1/2 teaspoon cayenne pepper
2 tablespoons flour
14 oz. chicken broth
4 cups oysters, drained (reserve liquid)
14 oz. artichoke hearts, cooked
2 tablespoons salt
1/4 teaspoon Tabasco sauce
1/2 cup whipping cream
3 tablespoons fresh chopped parsley
What To Do
1. Melt butter in 3-quart pot and saute shallots until translucent; then add add thyme, bay leaf and cayenne pepper.
2. Next, add flour and mix well.
3. Add chicken broth, oyster water (use less than full amount if desired, to taste), artichoke hearts, salt and Tabasco sauce. Bring to a boil, then add oysters and parsley.
4. Set heat to medium and partly cover; simmer 5 minutes.
5. Add whipping cream, stir, and serve.
