Asparagus with Red Pepper Sauce Recipe

This Asparagus With Red Pepper Sauce recipe makes 4 servings.
What You Need
1 pound asparagus
3 large red bell peppers
3 1/2 tablespoons olive oil
1 tablespoon balsamic vinegar
1/2 teaspoons fresh thyme leaves
Salt and pepper to taste
What To Do
1. Peel asparagus if necessary and cook in lightly salted water 4-8 minutes, or until tender but still firm when fork-tested. Rinse and drain under cold water and set aside.
2. Broil red peppers on all sides until lightly scorched. Place cooked peppers in a paper bag for 10 minutes, then remove and peel off skins. Cut open peppers and remove stem, seeds and any white flesh from the ribs.
3. Add peppers to food processor and puree, then mix in olive oil, vinegar and thyme. After a taste test, add salt and pepper if necessary.
4. Spoon red pepper sauce onto serving plates in equal amounts. Top each with asparagus.
