Lemon Herb Roasted Potatoes Recipe

What You Need
2 1/2 pounds small red potatoes
1/4 cup olive oil
2 tablespoons fresh lemon juice
1 teaspoon salt
1 teaspoon fresh oregano (or 1/2 teaspoon dried oregano)
1 teaspoon fresh thyme (or 1/2 teaspoon dried thyme)
1/4 teaspoon paprika
1/2 teaspoon finely ground pepper
What To Do
1. Preheat oven to 425F and lightly oil a baking sheet.
2. Wash, rinse and pat dry potatoes, the dice in 3/4-inch cut.
3. Combine other ingredients in a large bowl and mix well. Add potatoes and toss.
4. Arrange on baking sheet.
5. Bake 35 minutes, turning every 15 minutes, until tender and well browned.
